The Sinhalese New Year is a time of celebration with friends and family while the traditions and customs that go in par with the festivities are followed every year without fail. The preparation of sweetmeats plays a pivotal role during this time while there are a range of delicious snacks that grace the Avurudhu meal table along with milk rice (Kiribath). Aasmi is a traditional sweet that is deep fried in a very specific technique to create its lace like texture. It is usually drizzled with coloured treacle or sugar syrup to give its sticky finish.

The batter consists of a special mix of rice flour and an ingredient called ”Davul Kurundu” (the juice of the cinnamon leaf) which acts as its fermenting agent. The lace like patterns is created by pouring the batter mix through a special funnel.
